Abstract

A significant operational challenge for food service operators is defining energy use benchmark metrics to compare against the performance of individual stores. Without metrics, multiunit operators and managers have difficulty identifying which stores in their portfolios require extra attention to bring their energy performance in line with expectations. This report presents a method wherebymultiunit operators may use their own utility data to create suitable metrics for evaluating their operations.
